4 boneless skinless chicken breasts

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon Italian seasoning

1 teaspoon paprika

1 tablespoon olive oil

4 cloves garlic minced

1 cup chicken broth

1 cup heavy cream

1 cup freshly grated parmesan cheese

1 teaspoon onion powder

1/2 teaspoon red pepper flakes

1 cup sun-dried tomatoes sliced

3 cups fresh spinach

2 tablespoons cornstarch

2 tablespoons water

2 tablespoons fresh parsley chopped


Instructions

1. Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, paprika, and Italian seasoning.

2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 2–3 minutes per side until lightly golden. Transfer the chicken to the slow cooker.

3. In a bowl, whisk together chicken broth, heavy cream, garlic, onion powder, parmesan cheese, and red pepper flakes until smooth.

4. Pour the sauce mixture over the chicken inside the slow cooker.

5. Add the sliced sun-dried tomatoes evenly over the chicken and sauce.

6. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until the chicken is fully cooked and tender.

7. About 20 minutes before serving, stir in the fresh spinach until wilted.

8. Mix cornstarch and water together to create a slurry, then stir it into the sauce if a thicker consistency is desired.

9. Allow the sauce to cook for another 10–15 minutes until creamy and thickened.

10. Garnish with fresh parsley and extra parmesan cheese before serving.

Notes

Use freshly grated parmesan cheese for the smoothest and creamiest sauce texture.

Add spinach near the end of cooking to keep it vibrant and tender rather than overcooked.

Cooking on LOW creates juicier and more flavorful chicken compared to using HIGH heat.
