  • 1/4 cup cornstarch, to create a crispy exterior
  • 1/2 cup water, for the flour slurry
  • 1 cup Japanese panko breadcrumbs, for maximum crunch
  • 2 cups oil, vegetable or canola oil for frying
  • 1 pound crispy shrimp, cut into small bite-sized pieces
  • 1 ripe avocado, sliced thin
  • 1/4 cup sriracha mayo, or make your own by mixing sriracha and mayo
  • 1/4 cup eel sauce, for signature sushi pizza flavor
  • 2 tablespoons furikake, for garnish
  • Optional toppings, sesame seeds, green onion, spicy mayo, or cucumber slices

Instructions

  1. Cook and Season the Rice
  2. 1. Prepare sushi rice according to package directions, typically using a 1:1 ratio of rice to water.
  3. 2. Drizzle sushi vinegar over the warm rice and gently fold it in using a wooden spoon until evenly distributed.
  4. 3. Spread the seasoned rice on a clean surface to cool to room temperature, about 10-15 minutes.
  5. Prepare the Coating
  6. 1. In a shallow bowl, combine 1/2 cup all-purpose flour and 1/4 cup cornstarch with 1/2 cup water, stirring until you reach a smooth, lump-free consistency.
  7. 2. Pour 1 cup Japanese panko breadcrumbs into a separate shallow bowl for easy dipping.
  8. 3. Cut 4 nori sheets into large triangle shapes, roughly 4-5 inches on each side.
  9. Assemble the Triangles
  10. 1. Spread a thin layer of cooled sushi rice over the lower portion of each nori triangle, leaving about 1/2 inch at the bottom edge.
  11. 2. Place approximately 1 teaspoon of softened cream cheese on the upper part of each nori triangle.
