Ingredients
  

  • 2 crusty bread loaves such as ciabatta or Italian bread for the base
  • 10.5 ounces (300 g) small shrimp peeled and deveined, thawed if frozen
  • 7 ounces (200 g) shredded mozzarella for a melty, cheesy interior
  • 2 tablespoons (30 g) butter for frying the shrimp
  • 2 tablespoons plus 1 teaspoon (35 g) melted butter for the garlic brush
  • 4 to 5 garlic cloves minced finely
  • 1/2 teaspoon grated garlic for extra depth
  • salt to taste
  • paprika for color and mild spice
  • finely chopped cilantro or parsley fresh herbs for garnish and brightness, optional

Method
 

  1. Prepare the Bread and Cheese: Slice each bread loaf in half lengthwise with a sharp serrated knife to create two long, flat surfaces.
  2. Scoop interior: Using your fingers or a small spoon, gently remove some of the soft interior crumb from each half, creating a slight hollow without breaking through the crust.
  3. Add cheese: Distribute the shredded mozzarella evenly across all four bread halves, pressing gently so it adheres.
  4. First bake: Place the bread halves on a baking sheet and bake at 400 degrees Fahrenheit (200 degrees Celsius) for 5 to 7 minutes until the cheese is bubbly and beginning to brown.
  5. Cook the Shrimp: While the bread bakes, heat 2 tablespoons of butter in a large skillet over medium-high heat until it's foaming and fragrant, about 1 minute.
  6. Add aromatics: Add the minced garlic cloves and cook for 30 seconds until fragrant.
  7. Cook shrimp: Add the shrimp to the skillet in a single layer and cook for 2 to 3 minutes per side until they turn pink and opaque throughout.
  8. Season and cool: Season the cooked shrimp with salt and paprika to taste, then transfer to a clean plate and let cool slightly.
  9. Assemble the Bread: Distribute the cooked garlic shrimp evenly over the melted mozzarella on each bread half.
  10. Make garlic butter: In a small bowl, whisk together the melted butter, grated garlic, salt, paprika, and finely chopped cilantro or parsley until well combined.
  11. Brush topping: Using a pastry brush or the back of a spoon, brush the garlic butter mixture liberally over the shrimp and bread surface.
  12. Final bake: Return the bread to the oven and bake at 400 degrees Fahrenheit (200 degrees Celsius) for 3 to 5 minutes until the top is golden and the garlic butter is absorbed.
