- 3 green onions, chopped
- 1 tablespoon light soy sauce

- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 20 to 25 dumpling wrappers, round wheat wrappers
- 1 tablespoon neutral oil, vegetable or canola oil
- 1/2 cup water, for steaming
- 4 tablespoon soy sauce, for dipping sauce
- 2 tablespoon rice vinegar
- 3 to 4 tablespoon chili oil, adjust to your spice preference
- Optional toppings: green onions, chopped for garnish, sesame seeds, or extra chili oil
Instructions
- Combine ingredients: In a bowl, combine the ground chicken, onion, ginger, green onions, light soy sauce, dark soy sauce, sesame oil, salt, and black pepper. Mix until well combined and slightly sticky, about 1 to 2 minutes.
- Make the sauce: In a small bowl, mix together the soy sauce, rice vinegar, and chili oil. Set aside until ready to serve.
- Fill the wrappers: Place a dumpling wrapper in your hand and add about 1 tablespoon of filling to the center. Gently pinch the wrapper around the filling, leaving the top open and creating a small cup shape.
- Repeat the process: Continue with the remaining wrappers and filling until you have assembled all your dumplings, about 20 to 25 pieces.
- Heat the pan: Heat 1 tablespoon of oil in a nonstick pan over low to medium heat. Arrange the dumplings in a single layer in the pan, spacing them slightly apart so they don't stick together.
- Steam the dumplings: Pour about 1/2 cup water into the pan, cover with a lid, and steam for about 15 minutes, or until the chicken is fully cooked and the wrappers are soft and translucent.
- Finish cooking: Remove the lid and let any remaining water evaporate, about 2 to 3 minutes.
- Drizzle generously with the prepared sauce, then finish with extra chili oil and chopped green onions. Serve warm.
