  • 1 pound ground chicken, you can also use ground pork or ground turkey
  • 1/2 cup onion, finely chopped, this adds sweetness and moisture to the filling
  • 3 cloves garlic, minced, for aromatic depth

  • 3 green onions, chopped, use both white and green parts
  • 1 tablespoon light soy sauce, mild and less intense than dark soy
  • 1 teaspoon dark soy sauce, adds umami and color
  • 1 teaspoon sesame oil, for nutty, aromatic flavor
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 20 to 25 dumpling wrappers, round or square work equally well
  • 1 oil spray, for the pan to prevent sticking
  • 1/2 cup water, for steaming
  • 4 tablespoons soy sauce, for the sauce; the base of your dipping sauce
  • 2 tablespoons rice vinegar, adds tangy brightness
  • 3 to 4 tablespoons chili oil, adjust to your heat preference
  • Optional toppings: green onions, sliced, for a fresh, sharp finish
  • Extra chili oil, to drizzle for additional heat and shine

Instructions

  1. Combine the filling: In a bowl, mix ground chicken, onion, garlic, ginger, green onions, light soy sauce, dark soy sauce, sesame oil, salt, and pepper until well combined and slightly sticky. The mixture should hold together when pressed but remain moist.
  2. Mix the sauce: In a small bowl, combine soy sauce, rice vinegar, and chili oil for the sauce. Stir well to emulsify and set aside until ready to serve.
  3. Heat the pan: Lightly spray oil in a nonstick pan over low to medium heat, ensuring the surface is well coated to prevent sticking.
  4. Add filling to pan: Scoop portions of filling directly into the pan, spacing them so they don't touch. You'll be working directly in the pan rather than folding traditional dumplings.
  5. Wrap with the blanket: Place a dumpling wrapper over each scoop of filling and gently press the edges down around the filling to create the blanket look, allowing the wrapper to conform to the shape of the filling underneath.
  6. Steam the dumplings: Pour about 1/2 cup water into the pan, cover with a lid, and steam for 15 minutes over low to medium heat until the chicken is fully cooked and the wrappers turn soft and translucent. The wrappers will become tender and pliable, wrapping snugly around each mound of filling.
  7. Finish cooking: Remove the lid and let any extra water evaporate slightly, about 2 to 3 minutes, to allow the bottom to crisp up slightly.
  8. Drizzle and serve: Drizzle generously with the sauce, then finish with extra chili oil and sliced green onions before serving.
