Description

Turkish Poached Eggs, or çılbır, features silky poached eggs nestled in a bed of herbed Greek yogurt base, topped with a warm, spiced butter infused with chili flakes and paprika. This elegant yet simple dish delivers the perfect balance of creamy, tangy, and spicy flavors in every bite. Perfect for a special brunch, light dinner, or whenever you want to impress without spending hours in the kitchen.

Ingredients

Scale
  • 4 tablespoons full-fat Greek yogurt, ensures a creamy, rich base
  • 1 garlic clove, finely minced for subtle depth
  • ½ lemon, zest only, adds brightness and aroma
  • 1 teaspoon lemon juice, for tangy flavor
  • 1 tablespoon fresh dill, chopped, the signature herb
  • Salt and pepper, to taste
  • 2 fresh eggs, the stars of the dish
  • 1 splash white vinegar, for poaching water
  • 50 grams unsalted butter, about 3.5 tablespoons for the spiced drizzle
  • 1 tablespoon olive oil, to balance the butter
  • 1 teaspoon chili flakes, adjust to your heat preference
  • 1 teaspoon paprika, sweet or smoked, your choice
  • Crusty toasted bread or warm pita, for dipping and scooping
  • Extra fresh herbs, such as parsley, mint, or additional dill for garnish

Instructions

  1. Prepare the Yogurt Base: In a small bowl, mix the Greek yogurt, minced garlic, lemon zest, lemon juice, chopped dill, salt, and pepper until smooth and well combined.
  2. Set aside: Leave the yogurt mixture at room temperature so it stays cool and creamy while you prepare the eggs and spiced butter.
  3. Prep the eggs: Crack each egg into a fine mesh sieve and let the excess whites drain for about 30 seconds, then transfer to a small bowl for tender, compact poached eggs.
  4. Create a whirlpool: Bring a pot of water to a gentle simmer and add a splash of white vinegar, then stir vigorously to create a whirlpool in the center.
  5. Poach gently: Slide each egg into the whirlpool one at a time and poach for 3 minutes for runny, jammy yolks that bleed beautifully into the yogurt.
  6. Drain and rest: Remove the poached eggs with a slotted spoon and place them on a paper towel-lined plate to drain excess water.
  7. Melt gently: In a small pan over low heat, combine the unsalted butter and olive oil, allowing them to melt together slowly.
  8. Infuse with spices: Add the chili flakes and paprika to the melted butter mixture, stirring gently to combine.
  9. Toast the aromatics: Let the spices sizzle gently for 1 to 2 minutes until fragrant and the color deepens slightly, being careful not to burn them.
  10. Spread the yogurt: Spoon the seasoned yogurt onto a serving plate and use the back of the spoon to create a shallow well in the center.
  11. Crown with eggs: Carefully place the poached eggs on top of the yogurt, positioning them so their runny yolks are visible.
  12. Drizzle the butter: Pour the warm spiced butter generously over the eggs and yogurt, allowing it to pool and mingle with the other elements.
  13. Garnish and serve: Top with fresh herbs like parsley or additional dill if desired, and serve immediately with crusty toasted bread for scooping.
