8 small flour tortillas

1 1/2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 packet taco seasoning

1 can diced tomatoes with green chilies (drained)

1 cup black beans (drained and rinsed)

1 cup corn kernels

1 small onion chopped

2 cloves garlic minced

1/2 cup sour cream

4 oz cream cheese softened

1 tablespoon olive oil

1/4 cup fresh cilantro chopped

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat olive oil in a skillet over medium heat and sauté chopped onion until soft, then add garlic and cook briefly.

2. Stir in shredded chicken and taco seasoning, mixing well to coat evenly.

3. Add diced tomatoes, black beans, and corn, then simmer for 5–7 minutes.

4. Lower heat and mix in cream cheese until melted, then stir in sour cream until smooth.
