Ingredients
1 cup unsalted butter, melted
1 1/4 cups brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 tablespoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mini chocolate Easter eggs
1 cup semi-sweet chocolate chips
2 tablespoons pastel sprinkles
Instructions
1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper.
2. Melt the butter and allow it to cool slightly before mixing.
3. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
4. Add the eggs one at a time, then mix in the vanilla extract.
5. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
6. Gradually fold the dry ingredients into the wet ingredients until combined.
7. Stir in the chocolate chips and most of the mini Easter eggs.
8. Spread the dough evenly into the prepared baking pan.
9. Press the remaining Easter eggs and sprinkles on top of the dough.
10. Bake for 28 to 32 minutes or until the edges are lightly golden and the center is still slightly soft.
11. Allow the bars to cool completely before slicing into squares.
12. Serve and enjoy.
Notes
Do not overbake the bars if you want an ultra-soft and chewy texture. The center should still look slightly underdone when removed from the oven.
For extra bakery-style bars, reserve additional Easter eggs to press onto the top before baking.
Allow the bars to cool completely before slicing to help them hold their shape and create clean edges.
