Description

This Strawberry Eclair Cake is a dreamy no-bake dessert that’s perfect for anyone looking for an easy recipe that feels like a bakery-style treat. With layers of creamy vanilla filling, fresh strawberries, and soft graham crackers, it transforms into a rich and refreshing dessert after chilling. Whether you’re searching for quick dessert ideas, summer treats, or no-bake cake recipes, this one checks all the boxes for a simple yet impressive dish.

Ingredients

Scale

2 cups cold milk

1 package instant vanilla pudding mix

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

8 oz whipped topping

2 sleeves graham crackers

2 cups fresh strawberries, sliced

1 1/2 cups strawberry frosting or glaze

Instructions

1. In a large bowl, beat the softened cream cheese until smooth, then mix in powdered sugar until fully combined.

2. In another bowl, whisk together the cold milk and vanilla pudding mix until it thickens.

3. Fold the pudding mixture into the cream cheese mixture, then gently fold in the whipped topping and vanilla extract until smooth and fluffy.

4. Arrange a single layer of graham crackers in the bottom of a baking dish, covering the surface completely.

5. Spread a layer of the creamy mixture evenly over the graham crackers.

6. Add a layer of sliced strawberries over the cream.

7. Repeat the layers (graham crackers, cream, strawberries) until all ingredients are used, finishing with graham crackers on top.

8. Spread the strawberry frosting evenly over the final layer.

9. Cover and refrigerate for at least 6 hours or overnight until the layers soften.

10. Slice into squares and serve chilled.

Notes

Make sure the cream cheese is fully softened to avoid lumps in the filling.

Allow enough chilling time so the graham crackers soften properly into a cake-like texture.

Pat strawberries dry before layering to prevent excess moisture from making the dessert soggy.
