300g flank steak or sirloin, thinly sliced

1 tablespoon soy sauce

1 tablespoon cornstarch

1 teaspoon sesame oil

½ teaspoon black pepper

3 tablespoons soy sauce (2 light + 1 dark)

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 tablespoon brown sugar

1 teaspoon rice vinegar or lime juice

1 tablespoon water

1 teaspoon cornstarch

1 teaspoon chili flakes (optional)

200g egg noodles

1 tablespoon vegetable oil

2 garlic cloves, minced

1 teaspoon fresh ginger, grated

1 small head of broccoli, chopped into small florets

1 red bell pepper, thinly sliced

2 spring onions, chopped

Sesame seeds (optional, for garnish)


Instructions

1. In a medium bowl, combine sliced beef with soy sauce, cornstarch, sesame oil, and black pepper. Mix well and marinate for 15 minutes.

2. In a small bowl, whisk together light soy sauce, dark soy sauce, oyster sauce, hoisin sauce, brown sugar, rice vinegar or lime juice, water, cornstarch, and chili flakes. Set aside.

3. If using dried noodles, cook them according to package instructions. Drain, rinse with cold water, and toss with a little sesame oil to prevent sticking.

4. Heat a wok or large skillet over high heat and add oil. Sear the marinated beef in a single layer for 1–2 minutes per side until browned. Remove and set aside.

5. In the same pan, add garlic and ginger. Sauté for 30 seconds until fragrant. Add broccoli and bell pepper, stir-frying for 2–3 minutes until just tender.

6. Return the beef to the pan, add the noodles, and pour in the sauce. Toss everything together until well combined and the sauce thickens.

7. Stir-fry for another 2 minutes, then remove from heat.

8. Garnish with spring onions and sesame seeds. Serve hot.

Notes

For tender beef, slice it very thinly against the grain and don’t overcook it.
