Description

Smash Burger Tacos feature seasoned ground beef smashed thin onto a warm flour tortilla, seared until crispy, and topped with melted cheddar cheese, caramelized onions, shredded lettuce, and a creamy burger sauce. These handheld tacos deliver the best of both smash burgers and traditional tacos, perfect for quick weeknight dinners or casual entertaining.

Ingredients

Scale
  • 500 g ground beef, 15 to 20% fat content for optimal juiciness and crust
  • 4 medium flour tortillas
  • 1 tablespoon olive oil, for cooking the beef
  • 4 slices cheddar cheese
  • Salt and freshly ground black pepper to taste
  • Shredded lettuce, for serving
  • 2 large onions, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon brown sugar
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 3 tablespoons water, as needed to prevent sticking
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 2 tablespoons pickles, finely chopped
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Caramelize the Onions: In a large skillet over medium heat, combine 1 tablespoon olive oil and 1 tablespoon butter. Once the butter melts, add the sliced onions, brown sugar, salt, and black pepper.
  2. Cook the Onions Low and Slow: Stir occasionally and cook for 20 to 25 minutes, allowing the onions to soften and turn golden brown. Add small splashes of water as needed if they begin sticking before they're fully caramelized.
  3. Finish the Onions: Stir in the balsamic vinegar and cook for another 1 to 2 minutes until deeply caramelized and glossy. Set aside and keep warm.
  4. Make the Burger Sauce: In a small bowl, combine the Greek yogurt, mayonnaise, ketchup, mustard, finely chopped pickles, smoked paprika, sweet paprika, onion powder, garlic powder, and black pepper. Stir until smooth and creamy, then set aside.
  5. Prepare the Beef: Divide the 500 g ground beef into 4 equal portions. Place one portion onto the center of each flour tortilla and press it into a thin, even layer that spreads almost to the edges. Season generously with salt and freshly ground black pepper.
  6. Heat the Skillet: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until it shimmers and just begins to smoke, about 2 to 3 minutes.
  7. Smash and Cook: Carefully place one tortilla beef-side down into the hot skillet. Place a burger press or heavy pan on top and press firmly for 30 seconds. Cook for 3 to 4 minutes without moving it, until the beef develops a deeply browned, crispy crust.
  8. Flip and Melt Cheese: Remove the press and carefully flip the tortilla so the tortilla side is against the skillet. Place one slice of cheddar cheese over the beef, cover with a lid, and cook for 1 to 2 minutes until the cheese is fully melted and the tortilla is golden and crispy.
  9. Cook Remaining Tacos: Transfer the finished taco to a plate and repeat the smash and cook steps with the remaining three tortillas and beef portions.
  10. Add Toppings: Top each Smash Burger Taco with a generous portion of caramelized onions, a handful of shredded lettuce, and a generous drizzle of the creamy burger sauce.
  11. Serve Immediately: Serve right away while the tortilla is still crispy, the cheese is warm, and all the flavors are at their peak.
