Ingredients
1 lb fresh asparagus trimmed
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice

1/4 cup grated Parmesan cheese
2 tbsp toasted almonds or pine nuts
1 tsp Dijon mustard optional
1 garlic clove minced
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Wash and dry the asparagus, then trim the woody ends
2. Use a vegetable peeler to shave the asparagus into thin ribbons
3. Optional: soak ribbons in ice water for 5 minutes, then dry thoroughly
4. Whisk olive oil, lemon juice, zest, Dijon mustard, garlic, salt, and pepper
5. Toast nuts in a dry pan over medium heat until golden
6. Toss asparagus ribbons with dressing gently
7. Add Parmesan and toasted nuts, toss lightly
