Description

This creamy roasted garlic Greek yogurt mayo features tender, mellow roasted garlic blended with boiled eggs, Greek yogurt, and olive oil for a tangy, luxurious condiment. Perfect for sandwiches, burgers, roasted vegetables, and grilled proteins, it keeps for up to one week and transforms everyday meals into something special.

Ingredients

Scale
  • 1 head garlic, about 30g, roasted and squeezed from the skins
  • 2 large boiled eggs, about 100g total
  • 120 g olive oil, use extra-virgin for richer flavor
  • 120 g Greek yogurt, full-fat or 2% works best
  • 15 g Dijon mustard, adds tang and helps emulsify
  • 15 g fresh lemon juice
  • Salt and pepper, to taste
  • Optional toppings, red pepper flakes, fresh herbs (dill, basil, or parsley), or a pinch of honey to balance acidity

Instructions

  1. Prep the Garlic: Preheat your oven to 400°F (200°C). Cut off the top 1/4 inch of the garlic bulb, exposing the cloves inside.
  2. Oil and Season: Place the bulb on a large sheet of aluminum foil, then drizzle the exposed cloves with olive oil and sprinkle with salt and red pepper flakes if desired.
  3. Roast: Wrap the garlic tightly in the foil, place it on a baking sheet, and roast for about 45 minutes, or until the cloves are very tender and fragrant.
  4. Cool and Extract: Let the garlic cool for a few minutes, then gently squeeze the roasted cloves out of their skins into a small bowl.
  5. Combine Ingredients: In a blender or food processor, add the boiled eggs, roasted garlic cloves, olive oil, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  6. Blend Until Smooth: Process the mixture on medium speed for 1 to 2 minutes until it reaches a smooth and creamy consistency, scraping down the sides as needed to ensure everything is fully incorporated.
  7. Taste and Adjust: Taste the mayo and adjust the seasoning if necessary, adding more salt, pepper, or lemon juice to match your preference.
  8. Store: Transfer the mayo to an airtight container or jar and refrigerate until ready to use, where it will keep for up to one week.
