Ingredients
Scale
- 1 butternut squash, peeled and sliced into 1 cm thick pieces
- 2 tablespoons butter, melted
- 50 grams parmesan cheese, grated
- 1 tablespoon honey
- 1 teaspoon paprika powder
- 1 teaspoon garlic powder
- salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped
- Optional toppings, red pepper flakes, balsamic glaze, fresh sage, or thyme
Instructions
- Preheat the Oven: Set your oven to 200 degrees Celsius (400 degrees Fahrenheit) and allow it to fully preheat before beginning.
- Peel and Slice: Carefully peel the butternut squash using a vegetable peeler or sharp knife, then cut it into 1 cm thick slices for even cooking.
- Coat the Squash: In a large bowl, combine the butternut squash slices, melted butter, grated parmesan, honey, paprika, garlic powder, salt, and pepper, tossing until every slice is evenly coated with the mixture.
- Arrange on Baking Sheet: Spread the squash slices in a single layer on a baking sheet, ensuring they are not overcrowded so they can roast properly.
- Roast: Bake in the preheated oven for 30 to 35 minutes, until the squash is tender and golden brown on the edges.
- Add Fresh Parsley: Remove the baking sheet from the oven and immediately sprinkle the fresh chopped parsley over the hot squash slices for maximum flavor and a pop of color.
- Serve Warm: Transfer to a serving platter while still warm so the squash retains its creamy texture and the flavors meld beautifully.
