Ingredients

Scale
  • 500 g green asparagus, trim the woody ends
  • 2 balls of Burrata, room temperature
  • 4 tablespoons olive oil, divided
  • 3 garlic cloves, minced
  • 150 g cherry tomatoes
  • 1 organic lemon, zest only
  • 1 tablespoon sesame seeds
  • to taste salt and pepper
  • 1 tablespoon honey
  • ½ lemon, juice only
  • ½ teaspoon chili flakes

Instructions

  1. Preheat Oven: Set your oven to 200°C (390°F) and allow it to heat fully while you prepare the vegetables.
  2. Prepare the Vegetables: Rinse the asparagus and trim about 2-3 inches from the woody bottom ends, then pat dry with paper towels. Place the asparagus and cherry tomatoes in a baking dish.
  3. Season and Toss: Drizzle the vegetables with 2 tablespoons of olive oil, add the minced garlic, lemon zest, sesame seeds, salt, and pepper. Toss everything together until well coated.
  4. Roast: Roast in the preheated oven for 15 minutes until the asparagus is tender-crisp and the tomatoes are starting to burst.
  5. Make the Dressing: While the vegetables roast, whisk together 2 tablespoons of olive oil, 1 tablespoon of honey, juice of half a lemon, and 1/2 teaspoon of chili flakes in a small bowl until well emulsified.
  6. Arrange the Burrata: Place the burrata balls on a serving plate, allowing them to sit at room temperature.
  7. Layer the Vegetables: Spoon the warm roasted asparagus and tomatoes over and around the burrata.
  8. Finish: Generously drizzle the lemon honey dressing over the entire dish, then pour some of the flavorful pan juices over the top for extra flavor.
