Ingredients
Scale
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- 1 lime or lemon (optional, for garnish)
Instructions
- Prepare the Chicken: Pat the chicken thighs dry with paper towels. Trim any excess fat but leave the skin on.
- Make the Marinade: In a bowl, mix olive oil, minced garlic, paprika, ground cumin, dried oregano, salt, and pepper until it forms a thick paste.
- Season the Chicken: Rub the marinade generously over the chicken thighs, getting some under the skin as well. Let the chicken marinate for at least 30 minutes or up to overnight.
- Preheat the Oven: Preheat your oven to 400°F (200°C). Place the marinated chicken thighs on a baking sheet, skin side up.
- Roast the Chicken: Roast the chicken for 35-40 minutes, until the skin is golden and crispy, and the internal temperature reaches 165°F (75°C).
- Finish and Garnish: Let the chicken rest for a few minutes, then sprinkle with fresh parsley and a squeeze of lime or lemon, if desired.
