Description

This Persian Shirazi Salad features finely diced cucumbers, ripe tomatoes, red onion, and fresh mint, dressed with a bright lemon and olive oil vinaigrette. It’s perfect for busy weeknights, meal prep, or as a refreshing side dish alongside grilled proteins and rice.

Ingredients

Scale
  • 3 baby cucumbers, finely diced
  • 2 ripe tomatoes, finely diced
  • 1 red onion, finely diced
  • 2 tablespoons fresh mint, finely chopped, or 1 teaspoon dried mint
  • 1 lemon, juiced
  • 3 tablespoons olive oil, extra virgin
  • Salt and pepper, to taste
  • Optional toppings, fresh parsley, pomegranate seeds, crumbled feta cheese, or sumac

Instructions

  1. Prepare the Cucumbers, Tomatoes, and Onion: Finely dice the 3 baby cucumbers, 2 ripe tomatoes, and 1 red onion into small, uniform pieces, then add them all to a large mixing bowl.
  2. Add the Mint: Sprinkle the 2 tablespoons of chopped fresh mint over the vegetables and gently mix to combine.
  3. Make the Dressing: Drizzle the juice of 1 lemon and 3 tablespoons of olive oil over the salad, then season with salt and pepper to taste.
  4. Toss and Rest: Toss everything together until well combined and let the salad rest for 10 to 15 minutes before serving so the flavors can meld beautifully.
