Ingredients
Scale
- 5 medium tomatoes, bottoms trimmed flat
- 3 tablespoons olive oil
- 1 medium white onion, finely chopped
- 4 cloves garlic, minced
- salt, to taste
- 2 tablespoons tomato paste
- 30 grams Parmesan cheese, grated, plus extra for serving
- 2 teaspoons Italian seasoning
- black pepper, to taste
- 100 milliliters heavy cream
- 200-250 milliliters vegetable broth
- 250 grams pasta of your choice
- 3 tablespoons fresh parsley, chopped, plus more for garnish
- chili oil, for drizzling
Instructions
- Char the Tomatoes: Heat 3 tablespoons of olive oil in a large pan over medium-high heat until shimmering. Place the whole trimmed tomatoes, flat side down, into the pan and add the chopped onion and minced garlic to the center. Season with about 1 teaspoon of salt, cover, and cook for 8 to 10 minutes until the tomatoes are soft and the bottoms are lightly charred.
- Blend the Sauce: Remove the tomato skins and discard them. Add the tomato paste, grated Parmesan, Italian seasoning, black pepper, heavy cream, and vegetable broth to the pan. Using an immersion blender, blend everything until completely smooth and silky.
- Simmer: Let the sauce simmer gently over low heat while you prepare the pasta.
- Boil Water: Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente according to package directions, about 8 to 12 minutes depending on the pasta type. Drain the pasta, reserving about 2 ladles of the starchy pasta water.
- Combine: Add the cooked pasta directly into the simmering sauce and toss until evenly coated. If the sauce feels too thick, add a splash of reserved pasta water until the sauce reaches a creamy, smooth consistency.
- Serve: Plate the pasta and drizzle with chili oil, then top with fresh chopped parsley and extra grated Parmesan cheese.
