- 1 cup (2 sticks) unsalted butter, melted
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 cups old-fashioned rolled oats
- 1 cup raisins
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease lightly.
- In a large bowl, mix melted butter, brown sugar, egg, and vanilla extract until smooth.
- Add flour, baking soda, cinnamon, and salt. Stir until just combined.
- Fold in oats and raisins with a spatula until evenly distributed.
- Spread batter evenly into prepared pan and smooth the top.
- Bake for 25 to 30 minutes, until golden and set in the center.
- Cool in the pan for 20 minutes before lifting out and slicing.
