  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups old-fashioned rolled oats
  • 1 cup raisins

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease lightly.
  2. In a large bowl, mix melted butter, brown sugar, egg, and vanilla extract until smooth.
  3. Add flour, baking soda, cinnamon, and salt. Stir until just combined.
  4. Fold in oats and raisins with a spatula until evenly distributed.
  5. Spread batter evenly into prepared pan and smooth the top.
  6. Bake for 25 to 30 minutes, until golden and set in the center.
  7. Cool in the pan for 20 minutes before lifting out and slicing.
