Ingredients
2 cups cooked shredded chicken
1 tablespoon olive oil
1 packet taco seasoning
2 cloves garlic minced
1/2 cup finely chopped onion
1/2 cup tomato sauce or salsa
8 small corn tortillas
1 1/2 cups shredded cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 425°F (220°C).
2. Heat olive oil in a skillet over medium heat.
3. Add chopped onion and garlic, sauté until fragrant.
4. Add shredded chicken and cook for 3–4 minutes.
5. Stir in taco seasoning, tomato sauce, salt, and pepper. Simmer for 5 minutes.
6. Lightly brush both sides of tortillas with olive oil.
