Ingredients
200g dark chocolate
150g unsalted butter
200g granulated sugar
100g light brown sugar
3 large eggs
1 tsp vanilla extract
120g all-purpose flour
30g unsweetened cocoa powder
1/2 tsp salt
200g Mint Aero chocolate
75g chocolate chips optional
50g chopped walnuts optional
Instructions
1. Preheat oven to 170°C (340°F) and line an 8×8-inch baking tin with parchment paper.
2. Melt dark chocolate and butter together until smooth, then let cool slightly.
3. Whisk granulated sugar, brown sugar, and eggs until pale and thick.
4. Slowly mix melted chocolate into the egg mixture and add vanilla extract.
5. Fold in flour, cocoa powder, and salt until just combined.
6. Pour half the batter into the prepared pan and spread evenly.
7. Layer Mint Aero chocolate pieces evenly over the batter.
8. Cover with remaining batter, spreading gently.
9. Bake for 25–30 minutes until edges are set and center is slightly soft.
10. Cool completely before slicing into squares.
