Ingredients
2 cups rotini pasta
2 cups corn kernels
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons lime juice
1/2 cup cotija cheese
1/4 cup chopped cilantro
1/4 cup red onion diced
2 cloves garlic minced
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Cook the pasta in salted boiling water until al dente, then drain and rinse under cold water.
2. Prepare the corn by grilling or sautéing until slightly charred, or drain if using canned corn.
3. In a large bowl, whisk together mayonnaise, sour cream, lime juice, olive oil, garlic, chili powder, paprika, salt, and pepper.
4. Add the cooled pasta to the dressing and toss until evenly coated.
5. Stir in corn, red onion, and chopped cilantro.
6. Fold in most of the cotija cheese, reserving some for garnish.
7. Taste and adjust seasoning if needed.
8. Chill the salad for at least 30 minutes before serving.
9. Garnish with remaining cheese and cilantro before serving.
Notes
For extra smoky flavor, grill the corn instead of using canned or frozen.
Let the pasta cool completely before mixing to keep the texture perfect.
Add fresh lime juice before serving to enhance brightness.
