Description

This Mediterranean Feta Olive Oil Bread Dip features creamy feta cheese, briny olives, and sun-dried tomatoes tossed in a fragrant herb-infused olive oil dressing with fresh basil and bright lemon zest. Perfect for entertaining, meal prep, or bringing to a potluck gathering, this no-bake dip comes together in minutes and pairs beautifully with crusty bread, crostini, and fresh vegetables.

Ingredients

Scale
  • 120 ml extra virgin olive oil, use high-quality oil for the best flavor
  • 2 tablespoons balsamic glaze, or balsamic vinegar for a tangy depth
  • 3 cloves garlic, finely minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon red chili flakes, adjust to your heat preference
  • ½ teaspoon freshly ground black pepper
  • 200 g feta cheese, cut into small cubes, or use block feta packed in brine for creamier texture
  • 150 g mixed green and black olives, sliced
  • 120 g sun-dried tomatoes in oil, drained and finely chopped
  • ¼ cup fresh basil, chopped
  • 1 lemon, zest only

Instructions

  1. Whisk the dressing: In a shallow serving dish, whisk together the olive oil, balsamic glaze, garlic, Italian seasoning, red chili flakes, and black pepper until well combined.
  2. Add the dip ingredients: Add the sliced olives, chopped sun-dried tomatoes, cubed feta, chopped basil, and lemon zest over the dressing.
  3. Mix gently: Gently toss until all the ingredients are evenly coated in the flavorful herb dressing.
  4. Let it rest: Let the dip rest for 10 to 15 minutes so the flavors can meld together and the cheese softens slightly.
  5. Serve: Enjoy with toasted baguette slices, crostini, pita chips, crackers, or fresh vegetables, spooning some of the herb-infused oil over each serving for the best flavor.
