2 pounds russet or Yukon Gold potatoes, peeled and cut into 1-inch cubes

14 ounces kielbasa sausage, sliced into ¼-inch rounds

2 cups sharp cheddar cheese, freshly shredded

1 cup mozzarella cheese, freshly shredded

1 small yellow onion, finely diced

3 cloves garlic, minced

1 ½ cups heavy cream

½ cup sour cream

2 tablespoons unsalted butter, melted

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon dried parsley

¼ teaspoon crushed red pepper flakes

2 tablespoons fresh parsley, chopped


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. Peel and cube potatoes evenly. Rinse and drain thoroughly. Parboil for 8–10 minutes if desired, then drain.

3. Brown sliced kielbasa in a skillet over medium heat for 3–4 minutes per side until caramelized.

4. Sauté diced onion for 3–4 minutes, add garlic and cook 30 seconds until fragrant.

5. Whisk heavy cream, sour cream, melted butter, salt, pepper, paprika, thyme, parsley, and red pepper flakes.

6. Stir in 1 ½ cups cheddar and ½ cup mozzarella into the sauce.

7. Combine potatoes, kielbasa, onion, and garlic in baking dish. Pour sauce over and mix gently.

8. Top with remaining cheddar and mozzarella.

9. Cover with foil and bake 30 minutes. Remove foil and bake 20–25 minutes until golden and fork-tender.

10. Rest 10–15 minutes before serving and garnish with fresh parsley.

Notes

Use Yukon Gold potatoes for a buttery texture or russets for a fluffier finish.

Brown the kielbasa before baking to enhance smoky flavor.

Allow the casserole to rest before serving so the sauce thickens properly.
