Ingredients
Scale
- 12 soft flour tortillas, 4 inches each, the base for your crispy cups
- 350 g cooked shredded chicken, rotisserie chicken works perfectly for convenience
- 170 g cream cheese, softened to room temperature for easy mixing
- 150 g pepper jack cheese, shredded for that signature spicy kick
- 6 bacon slices, cooked crisp and crumbled for smoky flavor
- 3 medium jalapeños, 2 seeded and finely diced plus 1 cut into 12 garnish rings
- 60 g sour cream, adds creamy tang to the filling
- 0.5 teaspoon garlic powder
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 2 teaspoons oil, for brushing tortillas and greasing the tin
Instructions
- Make the Filling
- 1. Mix the Base: In a medium bowl, combine the softened cream cheese, pepper jack cheese, sour cream, garlic powder, salt, and black pepper until smooth and well incorporated, about 2 minutes.
- 2. Add Chicken and Bacon: Fold in the shredded chicken, crumbled bacon, and the 2 diced jalapeños until evenly distributed throughout the filling.
- 3. Taste and Adjust: Sample the filling and add more salt, pepper, or jalapeños if you prefer extra heat or seasoning.
- Shape and Prepare the Cups
- 1. Preheat and Prep: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and lightly grease a 12-cup muffin tin with the 2 teaspoons of oil.
- 2. Brush the Tortillas: Lightly brush each 4-inch flour tortilla on both sides with the remaining oil from your greasing brush.
- 3. Shape into Cups: Press each tortilla gently into a muffin cup, allowing the edges to extend slightly above the rim to create a crispy border.
- Assemble and Bake
- 1. Fill the Cups: Spoon approximately 2 tablespoons of the jalapeño popper filling into each tortilla cup, pressing gently so it settles at the bottom.
- 2. Bake Until Golden: Place the muffin tin in your preheated oven and bake for 25 to 30 minutes, until the tortilla edges are crispy and golden brown and the filling is hot throughout.
- 3. Garnish and Serve: Remove from the oven and carefully pop each cup from the tin using a fork or small spatula, then top each cup with a jalapeño ring for a fresh, spicy garnish.
