Whether you need a quick breakfast treat, easy dinner party dessert, or indulgent snack idea, these truffles hit every mark. They’re rich, creamy, slightly boozy (optional), and guaranteed to impress with minimal effort—definitely one of the best no-bake dessert food ideas around.

Ingredients

Scale

200g mascarpone cheese

100g crushed ladyfinger cookies

1 tbsp instant espresso powder or 2 tbsp strong brewed espresso (cooled)

50g powdered sugar

1 tsp vanilla extract

1 tbsp coffee liqueur (optional)

100g dark chocolate (for dipping)

1 tbsp cocoa powder (for dusting)

Pinch salt

Instructions

1. Crush the ladyfingers into fine crumbs using a food processor or rolling pin.

2. In a bowl, mix mascarpone, powdered sugar, espresso, vanilla, coffee liqueur (if using), and a pinch of salt until smooth.

3. Fold in the crushed ladyfingers until a soft dough forms.

4. Chill the mixture for at least 1 hour in the fridge.

5. Scoop and roll into small truffle-sized balls.

6. Freeze the balls for 15–20 minutes to firm them.

7. Melt the dark chocolate gently using a double boiler or microwave.

8. Dip each truffle in melted chocolate and place on parchment paper.

9. Dust with cocoa powder while chocolate is still tacky.

10. Let them set until the chocolate hardens completely.

11. Serve or refrigerate in an airtight container.

Notes

Use room temperature mascarpone to ensure a lump-free, smooth filling.

Crushing ladyfingers finely will help the mixture bind better and taste more uniform.

Truffles taste better after resting overnight, allowing flavors to deepen.
