Ingredients
1 cup all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 large egg
1/2 cup whole milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup hot coffee or hot water
1/4 cup sour cream
1 cup unsalted butter softened
3 1/2 cups powdered sugar
2 tablespoons Irish cream liqueur or Irish cream creamer
1 teaspoon vanilla extract
2 tablespoons heavy cream
1 pinch salt
2 tablespoons green and white sprinkles
2 tablespoons chocolate shavings
1 tablespoon cocoa powder
Instructions
1. Preheat the oven to 350°F and line a 12-cup muffin pan with cupcake liners.
2. In a large bowl whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
3. In a separate bowl whisk together the egg, milk, vegetable oil, vanilla extract, and sour cream until smooth.
4. Slowly combine the wet ingredients with the dry ingredients while mixing gently.
5. Pour in the hot coffee or hot water and stir until the batter is smooth. Do not overmix.
6. Fill each cupcake liner about two-thirds full with batter.
7. Bake for 18 to 22 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
8. Let the cupcakes cool in the pan for 5 minutes before transferring them to a cooling rack.
9. To prepare the frosting beat the softened butter until creamy and fluffy.
10. Gradually mix in the powdered sugar one cup at a time.
11. Add the Irish cream, vanilla extract, salt, and heavy cream if needed. Beat until smooth and fluffy.
12. Transfer the frosting to a piping bag and frost the completely cooled cupcakes.
13. Decorate with sprinkles, chocolate shavings, or cocoa powder before serving.
Notes
Use room-temperature ingredients for a smoother batter and fluffier frosting.
Do not overmix the cupcake batter because this can create dense cupcakes instead of soft and moist ones.
Allow the cupcakes to cool completely before frosting to prevent the frosting from melting.
