Description

  • 1 cup all-purpose flour, for the coating
  • 1/4 cup cornstarch, for extra crispiness
  • 1 teaspoon salt, for the coating
  • 1 teaspoon garlic powder, for the coating
  • 1 teaspoon paprika, for the coating
  • 1/2 teaspoon black pepper, for the coating
  • Oil for frying, enough to reach 350 degrees Fahrenheit
  • 3 tablespoons butter, for the sauce
  • 1/2 cup hot sauce, adjust to taste for spice level
  • 1/2 cup honey, for sweetness and balance
  • Optional toppings, ranch dressing, fresh parsley or chives, blue cheese dressing

Instructions

  1. Season the Wings: In a large bowl, combine salt, black pepper, garlic powder, and paprika. Add your 2 pounds of chicken wings and toss until evenly coated with the dry seasonings.
  2. Create the Marinade: Beat the eggs in a separate bowl and add 1 tablespoon of oil. Pour this mixture over the seasoned wings and stir until every wing is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or overnight for the best flavor development.
  3. Prepare the Coating: In another bowl, whisk together the flour, cornstarch, salt, garlic powder, paprika, and black pepper. Remove the marinated wings from the refrigerator and coat each wing thoroughly, pressing the flour mixture firmly onto the surface for maximum crispiness.
  4. Fry the Wings: Heat your oil to 350 degrees Fahrenheit in a large, heavy-bottomed pot or deep fryer. Carefully add the coated wings in batches (avoid overcrowding) and fry for 10 to 12 minutes, or until they are golden brown, crispy, and cooked through to an internal temperature of 165 degrees Fahrenheit.
  5. Make the Hot Honey Sauce: In a small saucepan over medium heat, melt the 3 tablespoons of butter, which should take about 1 to 2 minutes. Remove from heat and whisk together the melted butter, 1/2 cup of hot sauce, and 1/2 cup of honey until the mixture is completely smooth and well combined.
  6. Coat with Sauce: Transfer the hot fried wings to a large mixing bowl. Pour the warm hot honey sauce over the wings and toss vigorously until every piece is evenly coated and glistening.
  7. Serve Immediately: Transfer the coated wings to a serving platter and serve right away while they're still hot and crispy.
