1/2 cup corn kernels

1/2 cup diced bell peppers

1 tablespoon chopped cilantro

1/2 lime, juiced


Instructions

1. Rinse the rice thoroughly under cold water until the water runs mostly clear, then drain well.

2. Heat olive oil in a large skillet or saucepan over medium heat.

3. Add diced onion and cook for 3 to 4 minutes until softened.

4. Stir in minced garlic and cook for 30 seconds until fragrant.

5. Add the rice and toast for 4 to 5 minutes, stirring frequently until lightly golden.

6. Mix in diced tomatoes and tomato paste until evenly combined.

7. Add chili powder, cumin, paprika, oregano, salt, and black pepper.
