1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 packet taco seasoning

1 teaspoon paprika

1 cup enchilada sauce, divided

1 cup refried beans

1 cup cooked white rice

2 cups shredded Mexican cheese blend

6 large flour tortillas

1/2 cup sour cream

1 jalapeño, sliced

2 tablespoons chopped cilantro

2 tablespoons chopped green onions


Instructions

1. Preheat the oven to 375°F and lightly grease a large baking dish with cooking spray or a thin layer of enchilada sauce.

2. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.

3. Stir in the diced onion and cook until softened. Add the minced garlic and cook for another minute until fragrant.

4. Add taco seasoning, cumin, paprika, salt, and black pepper to the beef mixture. Stir well to evenly coat the meat with seasoning.

5. Pour a small amount of enchilada sauce into the skillet and simmer for several minutes until the mixture becomes rich and flavorful.

6. Warm the flour tortillas slightly so they become soft and flexible for rolling.

7. Spread a layer of refried beans onto each tortilla. Add cooked rice followed by the seasoned beef mixture.

8. Sprinkle shredded cheese over the filling before tightly rolling each tortilla into a burrito shape.
