Ingredients

Scale
  • 1 large cucumber, preferably English or hothouse varieties for fewer seeds
  • 300 g low-fat quark, or Greek yogurt for a creamier base
  • 3 garlic cloves, minced
  • 1 tablespoon fresh dill, finely chopped, or use dried dill if fresh is unavailable
  • 3 tablespoons olive oil, extra-virgin for the best flavor
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon vinegar, white or red wine vinegar work well
  • 1 teaspoon agave syrup, or honey to balance the flavors
  • to taste salt and pepper
  • Optional Ingredients
  • Fresh mint, adds a refreshing twist to the classic recipe
  • Red pepper flakes, for a subtle kick of heat
  • Extra dill or parsley, as a garnish for presentation

Instructions

  1. Prepare the Cucumber
  2. 1. Peel the cucumber: Use a vegetable peeler to remove the skin, especially if using a garden cucumber with a tough exterior. This ensures a smooth, refined texture in your dip.
  3. 2. Grate the cucumber: Using a box grater or food processor with a grater attachment, shred the cucumber into fine strands. Work over a bowl to catch any liquid.
  4. 3. Squeeze out excess water: This step is crucial to prevent a watery dip. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much liquid as possible.
  5. Combine and Season
  6. 1. Mix the base: In a large bowl, combine the quark, minced garlic, finely chopped dill, lemon juice, vinegar, olive oil, and agave syrup. Stir until well combined and creamy.
  7. 2. Add the cucumber: Fold in the squeezed cucumber strands, stirring gently to distribute evenly throughout the mixture.
  8. 3. Season to taste: Add salt and pepper gradually, tasting as you go to reach your preferred flavor balance. Remember that flavors intensify as the dip sits.
  9. 4. Chill before serving: Transfer to a serving bowl and refrigerate for at least 1 hour before serving. This allows the flavors to meld and intensify beautifully.
