1 lb large shrimp peeled and deveined

2 cups fresh pineapple chunks

1 small red onion chunks

1 red bell pepper squares

3 tablespoons olive oil

2 tablespoons fresh lime juice

2 cloves garlic minced

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon cayenne pepper optional

1 teaspoon honey or maple syrup

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh cilantro chopped

1 lime cut into wedges


Instructions

1. Pat shrimp dry and place in a large bowl

2. Mix olive oil, lime juice, garlic, spices, and honey

3. Coat shrimp with marinade and refrigerate 15–30 minutes

4. Soak skewers if wooden

5. Thread shrimp, pineapple, and vegetables onto skewers

6. Preheat grill to medium-high heat

7. Grill 2–3 minutes per side until cooked through
