Ingredients
1 lb large shrimp peeled and deveined
2 tbsp olive oil
3 cloves garlic minced
2 tbsp lemon juice
1 tsp paprika
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
1 cup cucumber sliced
1 cup cherry tomatoes halved
1/2 cup red onion thinly sliced
1/2 cup feta cheese crumbled
1/3 cup kalamata olives
2 tbsp fresh parsley chopped
2 cups cooked rice or quinoa optional
2 cups lettuce or mixed greens
Instructions
1. Rinse shrimp under cold water and pat completely dry.
2. Mix shrimp with olive oil, garlic, lemon juice, paprika, oregano, salt, and pepper and marinate for 10–15 minutes.
3. Slice cucumber, tomatoes, and red onion.
4. Heat skillet over medium-high heat and cook shrimp 2–3 minutes per side until opaque.
5. Prepare bowl base with rice, quinoa, or greens.
6. Add shrimp and arrange vegetables and olives.
7. Top with feta cheese and parsley.
8. Drizzle olive oil and lemon juice and serve.
