Description

Garlic Confit Carbonara features silky, roasted garlic cloves mashed into a creamy sauce with egg yolks, Parmesan, and crispy pancetta, clinging beautifully to tender spaghetti. This elegant yet surprisingly simple dish feels restaurant-quality while coming together in under an hour, perfect for special dinners or treating yourself on any weeknight.

Ingredients

Scale
  • 2 whole garlic confit bulbs, cloves peeled, or about 24 cloves if preparing from scratch
  • Olive oil, enough to completely cover the garlic for confiting
  • 250 g spaghetti, about 8 ounces
  • 150 g pancetta, finely diced, or guanciale for authentic carbonara
  • 3 egg yolks, room temperature for the smoothest sauce
  • 60 g Parmesan cheese, finely grated, freshly grated, never pre-shredded
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon freshly cracked black pepper
  • 1 cup reserved pasta water, hot, from cooking the spaghetti

Instructions

  1. Make the Garlic Confit: Preheat your oven to 120°C (250°F). Place the peeled garlic cloves in a small oven-safe baking dish in a single layer.
  2. Cover with Oil: Pour enough olive oil over the garlic cloves to completely submerge them, ensuring no clove is exposed to dry heat.
  3. Roast Low and Slow: Bake for 1 hour 30 minutes to 2 hours, until the garlic is soft, golden, and buttery to the touch. The cloves should yield easily when pressed with a fork.
  4. Cool Slightly: Remove from the oven and let cool for 10 minutes before transferring the garlic and its oil to a bowl for use in the carbonara.
  5. Boil the Water: Bring a large pot of generously salted water to a rolling boil about 5-7 minutes before the garlic finishes cooking.
  6. Cook the Spaghetti: Add spaghetti to the boiling water and cook until al dente according to package instructions, usually 9-11 minutes. Before draining, reserve 1 cup of hot pasta water in a measuring cup, then drain the pasta thoroughly without rinsing.
  7. Crisp the Pancetta: While the pasta cooks, heat a large skillet over medium heat and add the diced pancetta. Cook for 5-7 minutes, stirring occasionally, until the pancetta is golden and crispy. Remove from heat and set aside.
  8. Create the Base Sauce: Transfer the roasted garlic cloves and 3 tablespoons of their oil to a large mixing bowl. Add the egg yolks, finely grated Parmesan, softened butter, fresh parsley, chili flakes, and cracked black pepper.
  9. Mash and Combine: Using a fork, mash the garlic and butter together until they form a smooth, creamy paste. Stir in the crispy pancetta until evenly distributed.
  10. Emulsify the Sauce: Gradually whisk in the hot reserved pasta water, one splash at a time, stirring constantly until the sauce becomes silky, glossy, and smooth. This gentle heat cooks the egg yolks without scrambling them.
  11. Combine and Coat: Add the hot drained spaghetti to the sauce and toss continuously for 1-2 minutes, ensuring every strand is evenly coated in the creamy garlic carbonara sauce. If the sauce is too thick, add a splash more pasta water to loosen it.
  12. Serve: Divide the Garlic Confit Carbonara between serving bowls and garnish with extra crispy pancetta, a few whole roasted garlic confit cloves, and fresh chopped parsley. Serve immediately while hot and creamy.
