Description

Garlic Butter Baby Potatoes with Creamy Feta Dip features tender, waxy baby potatoes steamed until fork-tender, then pan-fried until golden and crispy, tossed with fragrant garlic, warm spices, and fresh parsley. Served alongside a silky dip made from creamy feta cheese, Greek yogurt, and grated garlic, these potatoes create an elegant appetizer or side dish that tastes far more complicated than it actually is. Perfect for entertaining guests or enjoying as a quick, impressive side on busy weeknights.

Ingredients

Scale
  • 800 g baby potatoes, waxy varieties work best for creamiest texture
  • water, just enough to cover the potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 5 cloves garlic, finely minced
  • 1 teaspoon paprika
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 150 g feta cheese, crumbled
  • 150 g Greek yogurt, 2 percent fat for creaminess
  • 2 cloves garlic, finely grated
  • 1/2 teaspoon chili flakes, optional for a slight heat

Instructions

  1. Steam the Potatoes: Place the baby potatoes in a large skillet or sauté pan in a single layer. Pour in just enough water to cover them and place a lid on top. Cook over medium-high heat for about 20 minutes, or until the potatoes are fork-tender and the water has completely evaporated.
  2. Brown the Potatoes: Add the olive oil and butter to the pan. Cook the potatoes over medium-high heat for 8–10 minutes, turning occasionally, until they are golden brown and lightly crispy on all sides. Allow the water to evaporate completely before adding fat so the potatoes brown instead of steam.
  3. Toast the Garlic: Stir in the minced garlic and cook for about 1 minute, just until fragrant. Add the garlic during the last minute of cooking to prevent it from burning and becoming bitter.
  4. Season and Finish: Sprinkle in the paprika, smoked paprika, salt, black pepper, and optional chili flakes. Toss everything together until the potatoes are evenly coated. Finish with the chopped parsley.
  5. Prepare the Dip: In a bowl, add the crumbled feta cheese, Greek yogurt, grated garlic, and chopped parsley. Mix until mostly creamy, leaving a few small feta crumbles throughout for pleasant texture contrast.
  6. Assemble and Serve: Transfer the creamy feta dip to a shallow serving bowl or plate. Arrange the warm garlic butter baby potatoes on top of the dip. Sprinkle with extra fresh parsley and a light dusting of paprika if desired. Serve immediately while the potatoes are still warm and crispy.
