  • 2 tablespoons Chin-Su Hot Sauce
  • 2 cloves garlic, grated

  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • oil for frying, vegetable or canola oil
  • 2 cups chopped cabbage
  • 5 to 6 mini carrots, shredded
  • 2 tablespoons Chin-Su Sweet & Sour Fish Sauce
  • 2 tablespoons mayonnaise
  • 1/2 cup mayonnaise, for spicy mayo
  • 1 tablespoon Chin-Su Hot Sauce
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 12 slider buns
  • pickle slices, as needed
  • 2 tablespoons melted butter
  • 2 cloves garlic, grated
  • 1 teaspoon dried parsley

Instructions

  1. Combine Marinade: Place the chicken pieces in a large bowl and add the buttermilk, Chin-Su Hot Sauce, grated garlic, garlic powder, onion powder, paprika, dried parsley, salt, and black pepper, mixing well until every piece is evenly coated.
  2. Marinate: Cover the bowl and refrigerate for at least 4 hours or overnight for the deepest flavor.
  3. Mix Coating: In a separate bowl, combine the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper.
  4. Coat Chicken: Remove the marinated chicken from the refrigerator and coat each piece thoroughly in the flour mixture, pressing lightly to create a crispy, even coating.
  5. Heat Oil: Heat oil to 350 degrees Fahrenheit in a deep skillet or Dutch oven.
  6. Fry Chicken: Working in batches to avoid overcrowding, fry the chicken for 5 to 7 minutes until golden brown, crispy, and cooked through.
  7. Drain: Transfer the fried chicken to a wire rack to drain excess oil and maintain crispiness.
  8. Combine Vegetables: In a medium bowl, combine the chopped cabbage and shredded carrots.
  9. Add Dressing: Pour in the Chin-Su Sweet & Sour Fish Sauce and mayonnaise, tossing until everything is evenly coated.
  10. Blend Ingredients: In a small bowl, whisk together the mayonnaise, Chin-Su Hot Sauce, black pepper, and cayenne pepper until smooth and fully combined.
  11. Spread Mayo: Apply a generous layer of spicy mayo to the bottom bun of each slider.
  12. Layer Chicken: Place one piece of crispy fried chicken on top of the mayo.
  13. Add Toppings: Top with a generous handful of the Sweet & Sour slaw and a few pickle slices.
  14. Cap and Butter: Place the top bun on the slider and brush the garlic butter mixture (made by combining melted butter, grated garlic, and dried parsley) over the top of each assembled slider.
