Description

These French Onion Gruyère Pastry Cups feature buttery puff pastry shells filled with deeply caramelized onions, creamy Gruyère cheese, and a hint of fresh thyme, creating a sophisticated appetizer with restaurant-quality flavor. Perfect for entertaining, dinner parties, or when you want to impress guests with an elegant, make-ahead dish that comes together in under an hour.

Ingredients

Scale
  • 320 g puff pastry, cut into 12 squares
  • 500 g yellow onions, thinly sliced
  • 30 g butter, for sautéing the onions
  • 60 ml beef stock, adds depth of flavor
  • 1 teaspoon Worcestershire sauce, enhances the savory notes
  • 120 g cream cheese, softened
  • 180 g shredded Gruyère cheese
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten for brushing the pastry

Instructions

  1. Caramelize the Onions: In a large skillet over medium heat, melt the butter until it foams, about 1 minute. Add the thinly sliced onions and stir to coat evenly. Cook over medium heat for 20-25 minutes, stirring occasionally, until they turn deep golden brown and develop a rich, sweet flavor.
  2. Add Liquid and Seasonings: Pour in the beef stock and add the Worcestershire sauce, stirring well. Cook for another 3-4 minutes until the liquid reduces slightly, then remove from heat and let cool for 5 minutes. Stir in the softened cream cheese, thyme leaves, salt, and pepper until the mixture is well combined and smooth.
  3. Prepare the Pastry: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a standard muffin tin with the 12 puff pastry squares, pressing them gently into the cups so they form shells.
  4. Brush and Fill: Brush the tops of each pastry cup with the beaten egg to achieve a golden, glossy finish. Spoon the caramelized onion and cheese mixture evenly into each pastry cup, filling them about three-quarters full, then sprinkle the remaining shredded Gruyère cheese generously over each filled cup.
  5. Bake: Bake for 12-15 minutes until the pastry is puffed, golden brown, and the cheese is bubbling and lightly browned on top. Remove from the oven and let cool for 2-3 minutes before serving.
