- 1/2 cup full-fat cottage cheese
- 1/4 tsp cream of tartar (optional)
- 1/8 tsp salt

Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Separate the eggs into two bowls. Ensure no yolk gets into the whites.
- Using a hand or stand mixer, beat the egg whites. Add cream of tartar once foamy. Whip until stiff peaks form.
- In a second bowl, mix egg yolks with cottage cheese and salt until smooth. Add optional seasonings if using.
- Gently fold egg whites into the yolk mixture in three batches to maintain volume.
- Spoon the mixture onto the baking sheet into 4–6 rounds.
