Instructions

  2. Separate the eggs into two bowls. Ensure no yolk gets into the whites.
  3. Using a hand or stand mixer, beat the egg whites. Add cream of tartar once foamy. Whip until stiff peaks form.
  4. In a second bowl, mix egg yolks with cottage cheese and salt until smooth. Add optional seasonings if using.
  5. Gently fold egg whites into the yolk mixture in three batches to maintain volume.
  6. Spoon the mixture onto the baking sheet into 4–6 rounds.
  7. Bake for 25–30 minutes or until golden brown and slightly firm.
  8. Cool on the tray for 5 minutes, then transfer to a wire rack. Serve warm or at room temp.
