Ingredients
Scale
- 1 sheet puff pastry, thawed if frozen, at room temperature
- 6 fresh figs, ripe but firm, sliced into quarters or halves
- 200 g Brie cheese, sliced about a quarter-inch thick
- 1 egg, beaten, for egg wash
- ½ teaspoon dried thyme, or 1 teaspoon fresh thyme leaves
- 30 g walnuts, roughly chopped
- 2 tablespoons honey, for drizzling
- Optional: sea salt and black pepper, pinch of each for finishing
Instructions
- Preheat the Oven: Heat your oven to 400°F (200°C) using conventional or top-bottom heat setting. Line a baking sheet with parchment paper.
- Score the Border: Place the thawed puff pastry on the prepared baking sheet. Using a sharp knife, score a 1.5 to 2 centimeter border around all four edges without cutting completely through the pastry.
- Arrange the Figs and Brie: Inside the scored border, begin arranging your sliced figs and Brie cheese in an alternating pattern. Keep the outer border clear so it can puff and brown.
- Apply the Egg Wash: Brush the beaten egg along the border only, avoiding the figs and Brie.
- Season and Bake: Sprinkle the dried or fresh thyme evenly over the figs and Brie. Bake for 20 to 25 minutes, until the pastry is puffed and deeply golden brown and the Brie has melted slightly.
- Toast the Walnuts: While the tart bakes, toast the chopped walnuts in a small dry skillet over medium heat for 2 to 3 minutes, stirring frequently, until fragrant.
- Finish the Tart: Remove the tart from the oven and let it cool for 1 minute. Scatter the warm toasted walnuts over the top, then drizzle generously with honey. Add a pinch of sea salt and cracked black pepper if desired.
- Serve: Slice into portions and serve while still warm, when the pastry is most crispy and the Brie is at its creamiest.
