1 cup fat-free Greek yogurt

2 tablespoons granulated sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

3 tablespoons brown sugar

1 tablespoon ground cinnamon

1 tablespoon unsweetened applesauce

3/4 cup powdered sugar

2 to 3 tablespoons skim milk

1/2 teaspoon vanilla extract


Instructions

1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add Greek yogurt and vanilla extract, then mix into a soft dough.

2. Transfer to a floured surface and knead gently for 2 to 3 minutes until smooth. Let rest for 5 to 10 minutes.

3. Roll the dough into a rectangle about 1/4-inch thick.

4. Spread applesauce over the dough, then sprinkle evenly with brown sugar and cinnamon.

5. Roll the dough tightly into a log and seal the edge.

6. Slice into 8 to 10 rolls and place in a prepared baking dish.

7. Preheat oven to 350°F (175°C).

8. Bake for 20 to 25 minutes until lightly golden.

9. Mix powdered sugar, milk, and vanilla to create the glaze.

10. Drizzle glaze over warm rolls and serve.

Notes

Use thick Greek yogurt for best texture
