Ingredients

Scale

2 lbs beef chuck

4 medium potatoes

3 carrots

1 onion

3 cloves garlic

4 cups beef broth

2 tablespoons tomato paste

2 tablespoons olive oil

2 tablespoons flour

1 teaspoon dried thyme

2 bay leaves

1 teaspoon salt

1/2 teaspoon black pepper

2 celery stalks

1 tablespoon Worcestershire sauce

Instructions

1. Cut the beef into cubes and prepare all vegetables.

2. Brown the beef in olive oil in batches and set aside.

3. Cook onion, garlic, and celery until softened.

4. Add tomato paste and flour, stirring well.

5. Deglaze the pot with beef broth.

6. Return beef and add broth, seasoning, and herbs.

7. Simmer for 1.5 to 2 hours.

8. Add potatoes and carrots and cook until tender.

9. Adjust seasoning and thicken if needed.

10. Serve warm.

Notes

Browning the beef deeply enhances the flavor.

Use large vegetable chunks to avoid overcooking.

Stew tastes better the next day after resting.
