Ingredients

Scale

1 pound lean ground beef

1 small onion, chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 packet taco seasoning

1/3 cup water

1 can Rotel tomatoes, drained

1 can black beans, drained and rinsed

1 cup corn kernels

1 cup salsa

1 can cream of chicken soup

1 cup sour cream

4 cups Nacho Cheese Doritos, lightly crushed

2 cups shredded cheddar cheese

2 cups shredded Monterey Jack cheese

1 jalapeño, sliced

2 green onions, sliced

2 tablespoons chopped fresh cilantro

Instructions

1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.

2. Heat olive oil in a large skillet over medium heat and sauté the chopped onion until softened.

3. Add the ground beef and cook until fully browned, breaking it apart while cooking. Drain excess grease.

4. Stir in the garlic and taco seasoning, then add water and simmer for 2 to 3 minutes until slightly thickened.

5. Add the Rotel tomatoes, black beans, corn, salsa, cream of chicken soup, and sour cream. Stir until creamy and fully combined.

6. Spread a layer of lightly crushed Doritos across the bottom of the prepared baking dish.

7. Spoon half of the taco meat mixture over the Doritos layer.

8. Sprinkle half of the cheddar cheese and Monterey Jack cheese over the filling.

9. Repeat the layers with more Doritos, remaining meat mixture, and remaining cheese.

10. Bake uncovered for 20 to 25 minutes until the cheese is melted and bubbly.

11. Remove from the oven and let the casserole rest for 5 minutes.

12. Garnish with jalapeños, green onions, and fresh cilantro before serving.

Notes

Use freshly shredded cheese for the smoothest and creamiest melted texture.

Do not crush the Doritos too finely or they may become soggy during baking.

Allow the casserole to rest for several minutes before serving so the layers hold together better.
