Ingredients
2 lbs chicken thighs
1 can (20 oz) pineapple chunks with juice
1/2 cup soy sauce
1/2 cup brown sugar
1/4 cup ketchup
3 cloves garlic, minced
1 teaspoon ginger, grated
2 tablespoons cornstarch
2 tablespoons water
2 tablespoons green onions, chopped
1 tablespoon sesame seeds
Instructions
1. Prepare the chicken by trimming excess fat and patting it dry with paper towels.
2. In a bowl, mix pineapple (with juice), soy sauce, brown sugar, ketchup, garlic, and ginger until well combined.
3. Place the chicken in the crockpot and pour the sauce mixture evenly over it.
4. Cover and cook on low for 6–7 hours or on high for 3–4 hours until tender.
5. Mix cornstarch and water to create a slurry, then stir it into the crockpot.
6. Cook uncovered for 20–30 minutes until the sauce thickens.
