Description
Juicy, caramelized Hawaiian chicken paired with rich and creamy coconut rice makes this dish an irresistible choice for a quick dinner, easy recipe idea, or even a healthy comfort meal. The balance of sweet pineapple, savory soy, and fragrant coconut creates a tropical-inspired plate that feels both indulgent and simple.
Ingredients
4 boneless skinless chicken thighs
1/4 cup soy sauce
3 tablespoons honey
3 cloves garlic minced
1 tablespoon fresh ginger grated
2 tablespoons lime juice
1/3 cup pineapple juice
1 tablespoon sesame oil
1 cup jasmine rice
1 cup coconut milk
1/2 cup water
1/2 teaspoon salt
2 green onions sliced
1 tablespoon sesame seeds
2 tablespoons fresh cilantro chopped
1/2 teaspoon red chili flakes optional
Instructions
1. In a bowl, whisk together soy sauce, honey, garlic, ginger, lime juice, pineapple juice, and sesame oil until well combined.
2. Add chicken thighs to the marinade, coat thoroughly, and refrigerate for at least 30 minutes or up to overnight.
3. Rinse jasmine rice under cold water until clear, then combine with coconut milk, water, and salt in a saucepan.
4. Bring rice to a boil, reduce heat, cover, and simmer for 15–20 minutes until tender.
5. Heat a skillet or grill pan over medium-high heat and cook the marinated chicken for 5–7 minutes per side until fully cooked and caramelized.
6. Optional: simmer leftover marinade in a saucepan until thickened to create a glaze.
7. Fluff the coconut rice with a fork and plate it as the base.
8. Place chicken on top, drizzle with glaze, and garnish with green onions, sesame seeds, cilantro, and chili flakes.
Notes
Use chicken thighs for juicier and more flavorful results compared to chicken breasts.
Do not skip rinsing the rice, as it helps achieve a fluffy texture instead of sticky rice.
Let the chicken rest for a few minutes after cooking to retain its juices before serving.
