Ingredients

Scale
  • 130 g pointed cabbage, finely shredded
  • 3 small cucumbers, thinly sliced
  • 2 spring onions, chopped
  • 2 tablespoons pistachios, roughly chopped
  • 200 ml creme fraiche, for a rich base
  • 1/2 lemon, juice only, fresh squeezed
  • 1 tablespoon mayonnaise, adds extra creaminess
  • 1 tablespoon honey, balances acidity
  • 2 cloves garlic, pressed
  • 2 tablespoons fresh dill, chopped
  • 1/2 teaspoon Italian herbs
  • 1/2 teaspoon chili flakes, for a gentle kick
  • to taste salt and pepper

Instructions

  1. Shred the Cabbage: Using a sharp knife or mandoline, finely shred the pointed cabbage into thin, even pieces about 2 to 3 millimeters thick.
  2. Slice the Cucumbers: Thinly slice the cucumbers into rounds or half-moons, depending on your preference.
  3. Chop the Aromatics: Finely chop the spring onions and fresh dill, keeping them separate for now.
  4. Prep the Garlic: Press the garlic cloves so they release their flavor into the dressing.
  5. Combine the Base: In a small mixing bowl, add the creme fraiche, mayonnaise, and lemon juice.
  6. Add the Flavor: Stir in the pressed garlic, chopped dill, honey, Italian herbs, and chili flakes.
  7. Season and Mix: Add salt and pepper to taste, then whisk the dressing until it's smooth and completely well-combined, about 1 to 2 minutes.
  8. Taste and Adjust: If you prefer a creamier dressing, add a touch more creme fraiche or adjust the lemon juice to your liking.
  9. Combine the Vegetables: In a large mixing bowl, toss together the shredded cabbage, sliced cucumbers, chopped spring onions, and roughly chopped pistachios.
  10. Add the Dressing: Pour the creamy dressing over the vegetables and toss gently until everything is evenly coated, about 1 minute.
  11. Chill and Serve: Transfer the salad to a serving bowl and refrigerate for at least 10 minutes before serving to allow the flavors to meld together.
