- 4 large Russet potatoes
- 2 tablespoons olive oil
- 1 1/2 cups shredded cheddar cheese
- 4 slices bacon, crumbled
- 1/2 cup sour cream
- 2 tablespoons chopped green onions
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Scrub and dry the Russet potatoes. Poke a few holes in each potato with a fork and bake on a baking sheet for 45-60 minutes until tender.
- Let potatoes cool for 10-15 minutes before cutting them in half lengthwise. Scoop out the flesh, leaving a 1/4-inch border.
- Coat the skins with olive oil and season with salt, pepper, and any desired seasonings.
- Bake the potato skins on a parchment-lined baking sheet, cut-side down, for 15-20 minutes until crispy.
- Add shredded cheddar cheese and crumbled bacon on top of each potato skin, then bake for another 5-10 minutes until the cheese is melted.
- Remove from the oven, and top with sour cream and chopped green onions.
- Serve immediately and enjoy!
