Ingredients
Scale
- 200 g halloumi, cut into cubes
- 1 cup cherry tomatoes, halved
- 1 cucumber, thinly sliced
- 1 ripe peach, sliced
- 1 tablespoon white sesame seeds
- 1 tablespoon black sesame seeds
- 3 tablespoons olive oil
- 1 lime, juiced
- 1 tablespoon honey
- 1 pinch chili flakes
- salt and pepper, to taste
- 5 fresh basil leaves, chopped
- 5 fresh mint leaves, chopped
- Optional: grilled or baked salmon, for serving
Instructions
- Heat the Skillet: Place a non-stick skillet over medium-high heat and let it warm for about 1-2 minutes until hot.
- Cook the Halloumi: Add the halloumi cubes to the hot skillet and cook for 2-3 minutes on each side until golden and crispy, working in batches if needed so the pieces don't crowd the pan. Transfer to a plate and set aside.
- Caramelize the Peaches: Using the same pan with its flavorful residue, add the peach slices and cook for 2-3 minutes until lightly caramelized and golden on both sides. Transfer to a plate.
- Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey, chili flakes, chopped basil, mint, salt, and pepper until smooth and well combined.
- Build the Base: Add the cucumber slices and halved cherry tomatoes to a large serving bowl.
- Layer the Components: Top with the crispy halloumi, caramelized peaches, and sprinkle both white and black sesame seeds over the top.
- Dress and Serve: Drizzle the honey lime dressing over the salad and gently toss to combine. Serve immediately on its own or alongside grilled salmon for an extra protein boost.
