Description

These golden Crispy Corn Fritters feature fresh corn combined with sharp cheddar cheese, aromatic parsley and chives, and warming paprika paste for a savory depth of flavor. The result is a perfectly crispy exterior that gives way to a tender, flavor-packed interior that’s absolutely irresistible.

These fritters are perfect for a quick appetizer, a fun side dish, or even a casual snack to share with family and friends. They’re simple enough for weeknight dinners yet impressive enough for entertaining.

Ingredients

Scale
  • 285 g corn, fresh, canned, or frozen, drained if canned
  • 120 g all-purpose flour, for structure and binding
  • 50 g cheddar cheese, grated for sharpness and richness
  • 80 ml milk, whole milk works best for a tender crumb
  • 1 tsp baking powder, for lightness and fluffiness
  • 2 eggs, large, room temperature
  • 1 tbsp paprika paste, or 1 teaspoon paprika powder if paste is unavailable
  • 2 tbsp fresh parsley, chopped fine
  • 2 tbsp chives, chopped, or green onions as an alternative
  • salt and pepper, to taste
  • oil for cooking, vegetable or canola oil, neutral in flavor

Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, whisk together the flour and baking powder until evenly distributed, about 30 seconds.
  2. Mix Wet Ingredients: In a separate bowl, beat the eggs with milk until well combined, then stir in the paprika paste until no lumps remain.
  3. Create the Batter: Add the wet ingredients to the dry ingredients and stir until just combined, then fold in the corn, grated cheddar, parsley, chives, salt, and pepper until you have a thick, chunky batter with no dry flour visible.
  4. Heat the Skillet: Heat a non-stick skillet over medium heat for about 2 minutes, then add a thin layer of oil, just enough to lightly coat the bottom.
  5. Cook the First Side: Scoop about 2 tablespoons of batter for each fritter and place it in the skillet, gently flattening it with the back of a spoon to roughly a quarter-inch thickness, then cook for 3 to 4 minutes until the bottom is deep golden brown.
  6. Flip and Finish: Carefully flip each fritter and cook the second side for another 3 to 4 minutes until equally golden and crispy, working in batches if needed to avoid overcrowding.
  7. Drain and Rest: Transfer the cooked fritters to a paper towel-lined plate to drain excess oil while they cool slightly.
