Ingredients

Scale
  • 250 g ground beef, 80/20 blend recommended
  • 1 small onion, finely chopped
  • 1 tablespoon tomato paste
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon paprika powder
  • 1/2 teaspoon chili flakes, adjust to taste
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper
  • 2/3 cup water
  • 6 flour tortillas, 15 cm (6-inch), soft varieties work best
  • 200 g Gouda cheese, sliced or shredded
  • Oil for frying, vegetable or canola oil
  • 1/2 onion, diced for salsa
  • 2 tomatoes, diced
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 lemon, for juice
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon mustard
  • 1 tablespoon onion, finely diced for sauce
  • 1 tablespoon pickle, finely diced
  • 1/2 teaspoon smoked paprika, for sauce

Instructions

  1. Sauté the Onion: Heat a little oil in a large skillet over medium heat, add the finely chopped onion, and cook for about 3-4 minutes until softened and fragrant.
  2. Brown the Beef: Increase heat to medium-high, add the ground beef, and cook for 5-7 minutes, breaking it apart as it cooks, until no pink remains and the meat is nicely browned.
  3. Add the Seasonings: Stir in the tomato paste, cumin, smoked paprika, paprika powder, chili flakes, granulated garlic, salt, and black pepper, mixing well to coat the beef for about 1 minute.
  4. Simmer Until Thickened: Pour in the water, reduce heat to medium, and simmer for 8-10 minutes, stirring occasionally, until the liquid reduces and the filling becomes thick and saucy.
  5. Fresh Salsa: In a bowl, combine the diced onion, diced tomatoes, chopped cilantro, lemon juice, salt, and pepper. Stir gently and set aside.
  6. Special Sauce: In another bowl, whisk together the mayonnaise, ketchup, mustard, finely diced onion, finely diced pickle, smoked paprika, salt, and pepper until smooth and well combined.
  7. Layer the First Cheese: Lay one tortilla flat on a clean surface and place a small handful of Gouda cheese on one half.
  8. Add the Beef: Spoon about 2-3 tablespoons of the seasoned beef filling onto the cheese.
  9. Layer More Cheese: Top the beef with another small handful of Gouda cheese.
  10. Fold and Crisp: Fold the tortilla in half to create a half-moon shape, press gently to compact it, then place it in a skillet with hot oil over medium-high heat and cook for 2-3 minutes on each side until golden brown and crispy.
  11. Finish and Serve: Top with fresh salsa, drizzle with the special sauce, and serve immediately while warm and crispy.
