1.5 lbs boneless skinless chicken breasts

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

0.5 tsp Italian seasoning

Salt and black pepper to taste

2 tbsp olive oil

12 oz spaghetti

1 tbsp butter

3 cloves garlic minced

1.5 cups milk

1 cup shredded mozzarella cheese

1.5 cups Velveeta cheese cubed

0.25 tsp ground black pepper

0.25 tsp red pepper flakes (optional)

2 tbsp chopped parsley

0.5 cup reserved pasta water (as needed)


Instructions

1. Season the chicken with garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper.

2. Heat olive oil in a skillet over medium-high. Sear chicken 5–6 minutes per side until golden and fully cooked. Remove and rest 5 minutes.

3. Cook spaghetti in salted boiling water until al dente. Reserve ½ cup pasta water, then drain.

4. In the same skillet, melt butter and sauté garlic for 30 seconds.

5. Pour in milk, then add Velveeta. Stir over low heat until melted.

6. Slowly add mozzarella, stirring constantly until fully melted and smooth.

7. Add black pepper and optional red pepper flakes.

8. Toss spaghetti in the cheese sauce. Use pasta water to loosen the sauce if needed.

9. Slice or cube the chicken, add on top of the pasta.

10. Garnish with chopped parsley and serve hot.

Notes

Use low heat when melting cheese to avoid curdling or grainy texture.

For quicker prep, substitute with rotisserie chicken.

Reserve pasta water to adjust the consistency of your cheese sauce as needed.
